There has been quite some development in video game fan servers throughout the past 10 - 15 years.
For anyone unaware, a fan server is a game server created by fans in order to bring some classic games back online.
I'll be adding to the list as I continue to discover more.
NASOMI SERVER - FINAL FANTASY XI
Fan server for the PC version of Final Fantasy 11. Probably one of the biggest FF11 fan servers out there. Main site, Forum, IRC chat, and Wiki are available. Currently only three expansions are online.
SAVE MGO - METAL GEAR ONLINE 1 + 2 SERVER
Server for both Metal Gear Online 1 (Metal Gear Solid 3) and Metal Gear Online 2 (Metal Gear Solid 4).
SOCOM COMMUNITY - SOCOM 1 + 2 (PAL + NTSC) SERVER
Server for Socom 1 + 2 on the Sony PlayStation 2. Emulator and console instructions are provided.
